CHICKPEA FLOUR PANCAKES - GLUTEN FREE, VEGAN, DELICIOUS!
RECOMMENDED PAN: Scanpan nontoxic nonstick
Simply mix 1.5 tsp baking powder per cup of Bob’s Red Mill chickpea flour, a sprinkle of Himalayan salt, with just enough water to get desired batter consistency. Thicker means fluffier. Thinner means crepe. Make 4" pancakes, and depending on diet, top with maple syrup, strawberries, grain-free granola, or for natural sweetness, heated and slowly cooked down strawberries. TIP: Use olive oil, not spray olive oil, on the Scanpan, as sprays will ruin the pan. TIP 2: Make a silver dollar sized one in the pan first, and then toss it - I don’t know the magic in that, but it makes the rest of the pancakes cook better.
